Bruny Island Cheese Co. was started by Nick Haddow, after he spent 10 years working with specialist cheese makers in many different countries around the world. He and his partner Leonie settled on Bruny Island in Southern Tasmania in 2001 to start making cheese for themselves (Bruny island cheese company, 2011).
“ Respect for food is a respect for life, for who we are and what we do “(Thomas Keller 2007)."My goal is to try to inspire people to think about what they eat, how its grown or reared, and then offer some ideas of what to do with it in the kitchen.  To know and trust what you eat, to get the most flavour out of every meal, it helps to get close to the source of your produce." I first visited in 1990 to source the wonderful Tasmanian ocean trout for my Sydney restaurant. As a food lover with a passion for natural flavours, i knew i had found paradise. Confit of Tasmanian ocean trout soon became known as my signature dish and i had people from all over the world flying along distances to Australia to try it at Tetsuya's. For me the pure tastes of Tasmanian food products continue to educate our palates and reward the adventurous (Tetsuya Wakuda 2009).
